I'd like to invite you to join me online for a free presentation series on CFS/fibromyalgia.  The event, called the "Fibro Free Summit," will feature health experts (including me) who'll share the latest information on how to recover from CFS/fibromyalgia and how to manage the related symptoms, including difficulty sleeping, chronic pain, low energy, mood issues, IBS, RLS, brain fog, and much, much, more.

CFS/Fibromyalgia-Friendly Recipes

Many people with CFS and fibromyalgia find that they have trouble tolerating wheat and dairy. This doesn't have to mean giving up life's pleasures. I've invited one of my favorite nutritionists, Lauren Hoover-West, to share some of her favorite recipes in this and upcoming newsletters. Below is her first contribution. Enjoy!

Chocolate Truffles

So creamy, rich and chocolaty they'll melt in your mouth. And you won't miss the dairy! 

Yields approximately 40 truffles.

Truffle Filling:

  • 12 ounces dairy-free, gluten-free chocolate chips (Dr. T note: I recommend Lilly's Stevia-Sweetened Chocolate — the ones without salt)
  • 1 1/4 cups regular coconut milk (not light), (Lauren note: I like Let's Do Organic Coconut Cream)
  • 1 tsp gluten-free vanilla extract or seeds of 1 vanilla bean
  • 1 drop gluten-free coffee extract or 1/8 tsp. instant espresso (optional)

Toppings (place these in bowls and set aside):

  • 1 cup shredded coconut
  • 1 cup chopped pecans or nuts of choice
  • 1 cup unsweetened cocoa powder, sifted

Directions:

  1. Place chocolate in a metal or glass bowl and set aside. 
  2. Put coconut milk in a sauce pot and bring to a boil then, turn off heat.
  3. Pour chopped chocolate into hot coconut milk. Let it sit for 2 minutes and then whisk until smooth and well mixed. 
  4. Add 1 tsp gluten-free vanilla extract or vanilla bean seeds and coffee extract and whisk. 
  5. Chill the Ganache in the refrigerator until it is completely set and thick like fudge (about 4 hours).
  6. Scoop with a small ice cream scooper and roll into your choice of toppings. 

These will keep 1 week in the refrigerator in an airtight container or in the freezer for a month or two.
